The coffee machine is humming, your head is still half on the pillow, and reaching for the hot side of the tap can feel like a smart shortcut. Hotter water sooner, caffeine sooner, awake sooner - that’s the logic. French health authorities are now putting the brakes on that habit: hot tap water belongs in the bathroom or at the sink, not in your mug.
What authorities see as a problem with coffee made from the hot tap
From the perspective of health ministries and regulators, the rule is straightforward: only cold mains water is officially classed as drinking water and is monitored accordingly. Hot water from the tap is not subject to the same level of drinking-water control.
That’s because the two supplies take different routes. Cold water typically comes straight from the distribution network into the kitchen. Hot water, by contrast, takes a detour through household pipework and a hot-water cylinder or heater. In those parts of the system, substances can leach out or microbes can multiply - without routine checks confirming what is actually coming out of the tap.

Health protection is the primary concern, but flavour is worth considering too. Coffee is highly sensitive to water quality: hardness, mineral content and contaminants can all shift aroma, acidity and bitterness.
If you fill your machine or French press with fresh, cold mains water, the result is often a cleaner, clearer cup. Trace metals or stale water from a hot-water system can skew the flavour - making coffee seem musty, faintly metallic or simply flat.

How to interpret limits and terminology
The 10 micrograms of lead per litre figure is the current legal limit for drinking water. A “microgram” is a millionth of a gram - an extremely small amount. Even so, children are particularly sensitive because, relative to their body weight, they drink more.
